Favorite recipe for banana muffins
A real happy food for me are with banana baked things! No wonder – they contain the hormones serotonin and norepinephrine, which support positive thinking. The high content of potassium in the banana is good against depression and the vitamins C and B6 contribute to being so healthy.
My favorite recipe for sweets is the following for incredibly tasty and definitely satisfying banana muffins.
Ingredients for about 12 muffins:
125g of soft butter
1 packet of vanilla sugar
1 tblsp. soda powder
60g walnut kernels, chopped
Preheat the oven to 180°C.
Mix the soft (not too liquid) butter with sugar and vanilla sugar until creamy. Peel the bananas and crush them well with the fork on a plate or in a bowl. Then add to the butter-sugar mixture and stir in the egg.
Mix the flour with the natron and stir in the banana mass together with the walnuts and the buttermilk. Stir everything well, preferably by hand, until a smooth dough is formed. Make sure that there are no flour chunks left. Chunks from the banana are however completely ok.
Lay out the muffin molds with matching paper baking molds and fill them approximately ¾ full with dough.
Now just put them in the oven and bake for about 20 – 25 minutes, depending on your oven type and setting. I recommend top and bottom heat for 20 minutes, then they are always finished with me. The muffins go up nicely and may be slightly brown on top.
The muffins are brilliant with a topping!
Take a pack of simple cream cheese and stir a few spoons of icing sugar in until it has a nice, light sweetness. Just make it to your taste. If desired, add a splash of orange juice, preferably directly from a fresh orange – and ready is the perfect cupcake topping! Simply spread on the chilled muffin and enjoy.
